Apple Cake
Ingredients
- 2 cups flour
- 2 cups sugar
- 2 teaspoons baking soda
- 1/2 teaspoon cinnamon
- 1/2 cup oil (corn or vegetable)
- 4 eggs
- 1 teaspoon vanilla
- 5 cups chopped apples (tart apples work well)
- 2 cups chopped walnuts (optional)

In a separate bowl sift together flour, baking soda and cinnamon. Set aside. Blend together sugar, oil, eggs and vanilla. Add dry ingredients and mix. Add apples and chopped nuts and mix well. Bake at 325 degrees in a greased and floured Bundt or Angel Food pan approximately 45 minutes, until toothpick comes out dry when tested. Let cool. Dust with confectioners' sugar on top for decoration, if desired. Also makes delicious apple cupcakes!
Apple Pie
Crust
- 3 C flour
- 3/4 tsp . baking powder
- 1C butter-flavored shortening
- 5-7 T cold milk
- 1 1/2 tsp salt
- 2 T brown sugar
- 1 T vegetable oil
- 1 egg white for garnish

Sift dry ingredients together twice. Cut in shortening. Sprinkle in oil then milk one tablespoon at a time, mixing well after each addition with a pastry fork. Combine to form a ball of dough and divide it to make a top and a bottom crust.
Filling
- 1 C sugar
- 3/8 tsp cinnamon
- 4 Golden Delicious*
- 6 Cortland Apples*
- 1/4 C orange juice (to prevent discoloration)
- 2 T butter
- 4 T cornstarch
- 1/4 tsp. nutmeg
Sift dry ingredients. Peel and chop apples into pieces. Splash them with orange juice and mix to prevent discoloration while chopping. Combine dry mixture with apples and turn into pastry lines pan. Pack in firmly. Dot with butter. Cover with top crust, seal edges and make holes for steam to escape. Garnish as desired (may use egg white to make shine). Bake at 375 degrees for 1 hour. Cover with foil to prevent discoloration after 20-30 minutes of baking as needed.
Apple Crumb Pie
FILLING
- 2 teaspoons lemon juice
- 1/2 cup sugar
- 1/2 teaspoon cinnamon
- 5 cups apples, cored and sliced
- (About 5 small Granny Smith apples work well)
- 1/2 cup raisins (optional)

TOPPING
- 3/4 cup flour
- 1/2 cup sugar
- 1/2 teaspoon cinnamon
- 1/3 cup butter
Preheat oven to 425 degrees and set butter out so it will be at room temperature. Line 9” pie pan with unbaked crust. Core and slice apples. Sprinkle the apples with lemon juice. Mix in the cinnamon and sugar. Fill pie shell with apple mixture. In a small bowl mix the toppings, flour, sugar and cinnamon. Rub the topping ingredients and butter together with your fingers until
mixture is crumbly. Sprinkle topping over pie. Bake 10 minutes at 425 degrees then reduce oven temperature to 350 Degrees and bake until crumb topping is browned and apples are soft,
approximately 50 minutes.
Apple Pork Chops
Ingredients
- 2 teaspoons vegetable oil
- 1/2 cup chopped onion
- 4 (1/2 inch thick ) pork chops
- 1/2 teaspoon salt ground black pepper to taste
- 2 apples peeled, cored and sliced
- 2 tablespoons brown sugar
- 1/2 teaspoons ground mustard
- 1/8 teaspoon ground cloves
- 3/4 cup hot water

Preheat oven to 375 degrees (190 degrees centigrade)
Heat oil in a large skillet. Sauté onion in oil for 1 minute or until tender. Remove onion and set aside. Brown pork chops on both sides in oil. Place chops in an 8 1/2 x 11 baking dish and sprinkle them with salt and pepper. Cover the chops with apples and cooked onion. In a small bowl, combine brown sugar, mustard, cloves and water. Pour over chops.
Bake in a preheated oven for 30-45 minutes. Serves 4
Cinnamon Apple Muffins
Ingredients
- 1 1/2 C flour
- 3/4 c sugar
- 1 1/2 tsp baking powder
- 1 tsp ground cinnamon
- 1/3 c butter, melted
- 1 egg slightly beaten
- 1/2 c milk
- 1 c finely chopped apple

Heat oven to 375 degrees. Combine dry ingredients in bowl. Add remaining ingredients to dry mixture. Stir just until flour is moistened. Spoon batter into greased muffin pan or use papers. Bake 18-23 minutes or until lightly browned. Let stand for five minutes, removed from pan. Makes 1 dozen.
Crunchy Apple Salsa with Grilled Chicken
Ingredients
- 2 C Gala apples, halved, cored and chopped
- 3/4 C (1 large) Anaheim chile pepper, seeded and chopped
- 1/2 C chopped onion
- 1/4 C lime juice
- 4 medium boneless, skinless chicken breasts
- salt and pepper to taste

Marinade:
- 1/4 C dry white wine
- 1/4 C apple juice or fresh cider
- 1/2 tsp grated lime peel
- 1/2 tsp salt
- dash pepper
Combine salsa ingredients and mix well; allow flavors to blend for about 1/2 hour. Serve over or alongside grilled chicken. Makes 3 C salsa. For grilled chicken combine marinade ingredients, pour over chicken breasts. Marinate for 20-30 minutes. Drain and grill over medium-hot coals, turning once, until chicken tests done. Serves 4.
Basic Apple Sauce
Ingredients
- 8 medium sized apples
- 1/2 C water
- 1 T reconstituted lemon juice
- 1/2 tsp cinnamon
- 1 tsp salt
- 1/2 C (or more) brown sugar

Core and dice apples; place in saucepan, add water and salt, simmer until soft. Press through sieve or food mill; add cinnamon, salt, lemon juice and add sugar to taste. Stir until dissolved. Serve hot or cold. Makes 3 cups.
Apple Salad
Ingredients
- 6 apples, cored and diced (skin on)
- 2 cups baby spinach
- 2 stalk celery, chopped
- 1 cup chopped walnuts
- 1/3 cup dried cranberries
- 3/4 cup crumbled blue cheese, crumbled
Combine together and toss.
Top with vinaigrette:
Whisk together
- 2 tablespoons walnut oil
- 1 tablespoon cider vinegar
- 1/2 teaspoon salt, 1/2 teaspoon pepper

Apple Crisp
Filling:
- 4 C sliced Cortland apples
- 1/2 C sugar
- 1/2 tsp cinnamon
Topping:
- 1 C brown sugar
- 1 C rolled oats
- 1/2 C butter
- 1 1/4 C flour
- 1/2 tsp salt
- 1/3 C shortening

Place apples mixed with sugar and cinnamon in the bottom of a greased 10" x 6" x 1/2" baking pan. Combine brown sugar and sifted flour, oats and salt in a bowl. Cut in butter and shortening as for pastry and sprinkle over the apples. Bake at 375 degrees for 40 minutes or until crisp and brown. Serves 6.
